DAVID LEBOVIZ - CHEESECAKE BROWNIE

Khuôn vuông 20cm x 20cm, lót trong lòng giấy bạc, ép miết chặt giấy bạc vào khuôn cho bánh được vuông.

Nguyên liệu gồm: 85g bơ nhạt cắt miếng nhỏ nhỏ
100gr chocolate đắng
100gr đường (đừng bớt đường nữa nhe, chị đã bớt rồi, trừ khi dùng chocolate loại ngọt thì bớt tiếp khoảng 15gr đường nữa)
2 quả trứng cỡ to, hoặc 3 quả trứng gà ta, để nhiệt độ phòng
70 gr bột mỳ đa dụng
1/2 thìa cf baking powder
1 5 gr bột cacao hoặc 1 gói bột cà phê tan không đường
1 tẹo muối
1 thìa tbsp rượu rhum hoặc 1 thìa tsp vanilla extract

Nguyên liệu lớp cheesecake
200g cream cheese
1 ở nhiệt độ phòng
1 lòng đỏ trứng cỡ to
70 gr đường (đừng bớt đường nữa nếu không ăn sẽ nổi rõ vị chua chua của cheese
1 thìa tbsp bột ngô
1 thìa tbsp rượu rhum hoặc 1 thìa tsp vanilla extract


1. Bật sẵn lò nóng 180 độ C

2. Làm lớp bánh brownie: Cho bơ và chocolate vào nồi nhỏ, đun nhỏ lửa đến khi tan chảy hết, dùng phới hoặc muỗng gỗ ngoáy cho tan mịn đều . Tắt bếp, trút chỗ 100gr đường vào, ngoáy cho tan đều và hỗn hợp sẽ nguội bớt, thì cho trứng vào, ngoáy cho tan đều.
Trút bộtvào hỗn hợp, trộn đều rồi cho bột cacao, muối, vanilla, trộn đều và đổ vào khuôn đã lót giấy bạc.

3. Làm lớp cheesecake: dùng 1 bowl khác, đánh đều creamcheese, 1 lòng đỏ trứng, đường, bột ngô, và vanilla đến khi có hỗn hợp mịn. Bước này có thể dùng máy xay sinh tố, food processor, handblender, bất kỳ máy gì đánh nhuyễn được hỗn hợp

4. Đổ lớp cheese lên trên lớp brownie, dùng mũi dao, hoặc dĩa nhọn, chạy các đường swirl bất kỳ, cho lớp màu nâu với màu vàng nhạt lẫn vào nhau, tạo vân xoáy, rồi bỏ khay bánh bào lò đã nóng sẵn, ngăn giữa, 2 dàn lửa, chỉnh nhiệt xuống chút còn 170 độ C, đặt thời gian 30'. Lò đủ nhiệt không mở giữa chừng đúng thời gian nhiệt độ này là chắc chắn chín.
Bánh để nguội, cất tủ lạnh qua đêm rồi mới cắt miếng nhỏ xinh 3x 3cm là vừa ăn.
